Flaón
(16th Century Cheesecake)
This recipe is found in Ruperto de Nola's
1525 cookbook, and is a specialty of Ibiza.
2 eggs
1/2 lb. cottage cheese
1/2 cup sugar
1/8 tsp. mint
1/8 tsp. anisette liqueur
3 tblsp. honey
1 tsp. rose water (uh, you can find this in most pharmacies!)
Cinnamon for dusting
Dough:
1 cup flour
1/4 tsp. salt
2 1/2 tblsp. water
3 tblsp. salad oil
Mix the flour and salt and stir in the water and oil. Roll dough out, fold in 3 parts, business letter style! Roll again and fold and roll 2 more times. Fit into an 8 inch loose bottom quick pan, covering the bottom and sides with the dough. Then, in a bowl, beat the eggs with the cheese, sugar, mint, and anisette. Spread onto the dough and bake 40 minutes at 350°F or until the filling is set. Mix together the honey and rose water. Dribble this mixture over the pie, then dust with cinnamon. Serve warm.
